Antonia Lofaso
Antonia's Lofaso invites you discover her worldview through her cuisine. Her interest in food and cooking after moving from suburbs of Long Island to the diverse culture of Los Angeles. The carnetas and the Cavatelli, she believes, can be found on the same menu. Her sensibility is always developing. What remains, however, in all of her dishes is a singular vision towards the future, while also reminiscing about the past. Inspired by her Italian-American heritage Lofaso established Scopa Italian Roots in 2013 and was instantly well-received. The restaurant's version of old-school Italian has been hailed as among Los Angeles' most compelling Italian restaurants. The restaurant serves delicious and consistent meals at Scopa, a neighborhood favorite. The patrons call it authentic and satisfying. Lofaso took her cues from the greats of culinary who employed sophisticated methods. But, she didn't hesitate to take extreme risk to follow her own instincts. She swiftly rose up the ranks at Wolfgang Puck's Spago before moving on to work closely with celebrities in various Los Angeles kitchens. Lofaso created Black Market Liquor Bar with Sal Aurora and Mario Guddemi in Studio City, California. With Black Market and the business partnerships she formed Lofaso found a place to call home. Lofaso would find the freedom to be creative that she wanted through the collaboration. Black Market does not have any one specific direction, which is the reason why it was created. The course could begin with potato chips dill, shishito chilies and then move on to an Korean wings dish and meatballs. Antonia anchors the bold range of flavours. Lofaso measured her professional success in part by her ability to both understand and be genuine to her audience. Famous appearances in Top Chef Chicago & Top Chef: All Stars showcased her talents outside of the cooking area. Her talents are visible in her frequent appearances as CNBC's Restaurant Startup judge, and on Food Network's Cutthroat Kitchen Man vs. Child & ABC's Real O'neals. Lofaso has teamed up in partnership with Penguin Publishing to publish The Busy Mom's Cookbook 100 Recipes for Quick, Delicious, Home Cooked Meals. In this book, she discusses her experience as a mother, and also a student of The French Culinary Institute. Lofaso believes that the motivation behind all of her accomplishments originates from the kitchen and it is because of this that she has a a firm finger on the pulse. She is revolutionizing her industry's aesthetic by redesigning chef wear to be functional and stylish, through her brand Chefletics.
